Pines of Rome (Pini di Roma) - Respighi
Pines of Rome by Ottorino Respighi is a particular favourite of mine. The piece evokes four pine trees in Rome, the first being in a busy plaza.
You can straight away hear the bustling activity in the square, the movement, the franticness of the people going about their day.

Quotation of Dream - "Say sea, take me!" - Takemitsu
Toru Takemitsu is a famed Japanese composer who wrote both concert music and over film scores. He has, throughout his career written over 100 scores.
This piece's particularity is that is quotes directly from Debussy's La Mer, weaving in and out as if in a dream.
